Dijon Lamb Chops Recipe

Ingredients

 4 lamb chops (about 11/2 pounds)
 1 lemon, cut in half Garlic powder Freshly ground pepper
 Parsley1 Cup (16 tbs), chopped
 Dijon Mustard1/3 Cup (16 tbs)
 1 tablespoon plus 1 teaspoon wheat bran Vegetable cooking spray Lemon slices (optional) Lime slices (optional)

Directions

Trim fat from lamb chops.
Rub both sides with lemon; sprinkle lightly with garlic powder and pepper.
Combine next 3 ingredients; mix well, and press on all sides of chops.
Place chops in a 12- x 8- x 2-inch baking dish coated with cooking spray; insert meat thermometer into one chop, being careful not to touch fat or bone.
Bake, uncovered, at 500° for 4 minutes.
Reduce heat to 350°, and bake an additional 15 minutes or until thermometer registers 180°.
Garnish with lemon and lime slices, if desired.
