Dijon Citrus Lamb Chops Recipe
Ingredients
4 4 6 oz. lamb loin chops
1/4 C Dijon mustard
1 T orange juice
1 T brown sugar
1/2 T black pepper
1/4 T salt
2 oranges, peeled and cut into 1/2 inch rings nonfat cooking spray
Directions
Remove any visible fat from the lamb chops.
Lightly coat the grill with cooking spray and preheat for 5 minutes.
In a small bowl, blend the mustard, juice, sugar, pepper and salt.
Place the chops in the grill and cover each with the mustard orange sauce.
Grill for 4-6 minutes, or according to your preference.
Arrange the orange slices on 4 plates and place a lamb chop on top of each.
