Dijon Tofu Sandwiches Recipe
Ingredients
| 1 16-ounce package tofu, well drained | ||
| Shredded monterey jack cheese | 1/4 Cup (16 tbs) | |
| 2 tablespoons reduced-calorie mayonnaise or salad dressing | ||
| 4 teaspoons Dijon-style mustard | ||
| Garlic salt | 1 Teaspoon | |
| 4 bagels or English muffins, split and toasted | ||
| Tomato | 1 Medium, thinly sliced | |
| Alfalfa sprouts | 1 Cup (16 tbs) | |
Directions
In a medium mixing bowl use a fork to mash tofu. Stir in cheese, mayonnaise or salad dressing, mustard, and garlic salt; mix well. Spread tofu mixture on each bagel or English muffin half. Place on a baking sheet.
Broil 4 to 5 inches from the heat about 4 minutes or till light brown. Top with tomato and alfalfa sprouts.
