Duck In Orange Juice Recipe
Ingredients
| Duckling | 1 Pound, cut into pieces | |
| Salt | 1 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
| Orange juice | 3 Cup (16 tbs) | |
| Vinegar | 1 Cup (16 tbs) | |
| Garlic | 2 Clove (5gm), minced | |
| Almonds | 1/4 Cup (16 tbs), slivered | |
| Raisins | 2 Tablespoon | |
| Parsley | 1 Tablespoon, chopped | |
| Bay leaves | 2 | |
| Onions | 2 , chopped | |
| 4 tomatoes, peeled and chopped | ||
| Thyme | 1/4 Teaspoon | |
| Marjoram | 1/4 Teaspoon | |
Directions
Put duckling in shallow baking pan, combine remaining ingredients; pour over duckling.
Cover duckling with foil.
Bake at 325°, allowing 20 minutes per pound.
