Ingredients

 
8 cups Basic Chinese Chicken or Pork Broth
 
2 pounds winter melon, washed, peeled and diced
 
6 large dried forest mushrooms, softened and diced
 
One 1-inch piece dried tangerine peel soaked in water to cover
 
10 minutes and drained
 
1/2 cup each diced water chestnuts and bamboo shoots
 
1 chicken breast, skinned, boned and diced
 
Salt
 
1/2 cup slivered Virginia ham
 
Chinese parsley sprigs

Directions

Combine broth, winter melon, mushrooms, tangerine peel, water chestnuts and bamboo shoots in large kettle; cover, bring to boil, lower heat and simmer gently 1 hour, adding chicken last 10 minutes.
Discard tangerine peel and adjust seasonings with salt.
Garnish with ham and Chinese parsley.
