Ingredients
| Chinese mushrooms | 4 , dried | |
| Turkey breast | 375 Gram, skinned | |
| Egg white | 1 | |
| Corn flour | 1 Tablespoon | |
| Oil | 4 Tablespoon | |
| Garlic | 2 Clove (5gm) | |
| Root ginger slice | 2 , peeled, finely chopped | |
| Leeks | 2 | |
| Small head celery - 1, diagonally sliced | ||
| Pepper red | 1 To taste, cored | |
| Light soy sauce | 3 Tablespoon | |
| Dry sherry | 2 Tablespoon | |
| Salt | To Taste | |
| Celery leaves, to garnish | ||
Directions
GETTING READY
1) In a bowl, add warm water to soak the mushrooms for 15 minutes.
2) Squeeze the water to dry the mushrooms. Remove the tough stem to slice the mushroom caps.
3) Sprinkle salt on the diced turkey.
4) Coat the turkey dices with egg white and roll into corn flour. Place aside.
MAKING
5) In a wok, heat oil to hot.
6) Stir-fry the turkey for a minute until golden brown.
7) With a slotted spoon remove the turkey dices and transfer on paper towel to soak excess oil.
8) In the wok, add garlic, ginger, leeks and celery to stir-fry over high heat for 1 minute.
9) Bring back the turkey into wok.
10) Place red pepper and stir-fry for 30 seconds.
11) Pour in soy sauce and sherry. Stir well to cook for a further 30 seconds.
SERVING
12) In a warmed serving dish, spoon the preparation. Sprinkle celery leaves to garnish and serve immediately.
