Diabetic Applesauce Cookies Recipe

Ingredients
1 2/3 cups sifted flour
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1 tsp. baking soda
1/2 cup butter or shortening
2 Tbsp. liquid sweetener
1 egg
1 cup unsweetened applesauce
1/3 cup raisins, optional
1 cup whole bran cereal
Nuts, optional
Directions
Preheat oven to 375°.
Sift together flour, salt, cinnamon, nutmeg, cloves and baking soda.
Mix butter, sweetener and egg until light and fluffy.
Add flour mixture and applesauce alternately mixing well.
Fold in raisins, nuts and cereal.
Drop by level teaspoonfuls onto greased cookie sheet.
Bake 18 minutes until golden brown.
Makes 48 cookies.
Each cookie has 40 calories.
Five cookies equal 1 bread exchange, 2 fat exchange, 1 fruit exchange.
They do not keep too well.
Make small amount and store in refrigerator.

I made applesauce cookies with out the egg, shortening, bran. They are always turn out good. I also looking recipes for diabetic as I am one too.

I was looking for vegan recipes for my diabetic husband and myself, but this recipe includes an egg. Do you have vegan dessert recipes? Thanks this looks good but I'll have to substitute for the egg.
