Devonshire Carrots Recipe
This is a kick ass Devonshire Carrots recipe which will knockout anyone who eats it. Excuse my French please. This Devonshire Carrots is so tasty that I cannot resist serving it as a Side Dish often. This Devonshire Carrots recipe is sure to receive rave reviews from all. Mind you, you shall be forgotten so be ready.
Ingredients
6 to 8 long carrots peeled and thinly sliced
1 tsp (5 mL) sugar
1/2 cup (125 mL) water or chicken consomme
2 tbsp (30 mL) butter
1 tsp (5 mL) cornstarch
Salt and pepper to taste
Juice and grated rind of 1/2 a lemon
2 tbsp (30 mL) fresh mint leaves chopped fine
Directions
Place in a microwave-safe dish the carrots, sugar and water or chicken consomme.
Cover with lid or waxed paper.
Microwave at HIGH 6 to 8 minutes, stirring twice during the cooking period, after 3 and after 5 minutes of cooking.
Drain the carrots, reserving the liquid.
Set aside.
Melt the butter in a microwave-safe bowl 1 minute at HIGH.
Stir in the cornstarch, salt and pepper to taste.
Add the water or chicken consomme drained from the carrots.
Stir until well mixed.
Add the juice, the grated lemon rind and the chopped mint, stir to mix.
Microwave 2 minutes at HIGH, stir well.
Add the cooked carrots, stir.
Microwave 2 minutes at MEDIUM-HIGH.
Serve.
