Ingredients
7 c. butter
6 oz. baking chocolate
2 c, sugar
5 eggs, separated
1/2 c. light brown sugar
1 tsp. soda
1 tbsp. vanilla
1 c. buttermilk
3 c. cake flour
1 tsp. baking powder
1/4 tsp. Salt
Directions
Cream butter well.
Melt chocolate over hot water; add chocolate to butter.
Add sugar; cream until sugar is dissolved.
Beat egg yolks well.
Add yolks and brown sugar to creamed mixture.
Dissolve soda in 1/2 cup water.
Combine soda water, vanilla and but- termilk.
Sift flour, baking powder and salt.
Add buttermilk mixture to creamed mixture alternately with dry ingredients, beginning and ending with dry ingredients.
Beat egg whites until stiff peaks form; fold into cake mixture.
Pour into three 9-inch layer pans.
Bake at 350 degrees for 30 to 35 minutes or until cake tests done.
Cool on racks.
Spread with Seven-Minute frosting or chocolate frosting.
