Deviled Crab Recipe
Ingredients
1I2 lb crab meat 1 onion, finely chopped 4 tablespoons butter 1/4 cup breadcrumbs 5 tablespoons grated Parmesan cheese 3 tablespoons light cream 1 teaspoon anchovy paste pinch of dry mustard pinch of cayenne, or 2-3 drops of Tabasco sauce dash of Worcestershire sauce 3 tablespoons browned breadcrumbs 2 tablespoons melted butter (for sprinkling) For garnish 3 bananas 3 tablespoons butter squeeze of lemon juice deviled crackers 4 crab shells, or individual gratin dishes
Directions
Method In a skillet fry onion in 2 tablespoons butter until soft.
Add remaining 2 tablespoons butter and, when melted, add mixture to the crab meat with the breadcrumbs, 2 tablespoons cheese, cream, anchovy paste, seasoning and Worcestershire sauce.
Add more seasoning if necessary—the mixture should be spicy.
Fill into the shells or dishes, smooth the tops and spread with a mixture of browned bread- crumbs and the 3 tablespoons cheese.
Sprinkle with melted butter; bake in a hot oven (400° F) for 10-15 minutes or until brown.
For garnish, peel the bananas and cut in thick diagonal slices.
