Deviled Veal Riblets Recipe

1 4-pound veal breast
 
Water
 
1 10- to 12-ounce jar orange marmalade
 
1/2 cup Dijon mustard with seeds
 
1/3 cup packed brown sugar
 
2 teaspoons salt

Directions

1. Cut veal breast into 1-rib portions. In 8-quart saucepot, cover riblets with water; over high heat, heat to boiling. Reduce heat to low; cover and simmer 1 hour or until tender. Remove riblets to platter; cover and refrigerate.
2. About 1 hour before serving, prepare outdoor grill for barbecuing.
3. Meanwhile, in small bowl, mix orange marmalade, mustard, brown sugar, and salt.
4. Place cooked riblets on grill over medium heat; cook 20 minutes or until heated through, turning often and brushing with marmalade mixture during last 10 minutes of cooking.
