Deviled Broiled Tomatoes Recipe
Ingredients
| 6 medium-sized tomatoes | ||
| Few grains cayenne | ||
| Bread crumbs | ||
| Butter | ||
| 1 hard-cooked egg, finely mashed | ||
| Butter | 3 Tablespoon | |
| Prepared mustard | 3/4 Teaspoon | |
| Tabasco sauce | 3 Drop | |
| Worcestershire sauce | 1 Tablespoon | |
| Sugar | 1 Teaspoon | |
| Wine vinegar | 2 Tablespoon | |
| 1 large egg, slightly beaten | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cut tomatoes in half.
Sprinkle each half with salt, pepper and a few grains of cayenne.
Top with bread crumbs.
Dot with bits of butter.
Arrange on rack of broiling pan.
Then: add butter, mustard, salt, a few grains of pepper, 3 drops of Tabasco sauce, Worcestershire sauce, sugar and wine vinegar to mashed egg.
Mix thoroughly.
Stir in raw egg.
Cook over hot water, stirring constantly, 3 to 4 minutes until the mixture thickens.
Remove from heat and keep warm.
Set aside while tomatoes broil.
Cook tomato halves under broiler until crumbs brown and tomatoes wrinkle.
Arrange on heated platter and top each half with a dollop of the sauce.
