Devil's Food Cupcakes Recipe
Devil's Food Cupcakes are just the thing to satiate your hunger pangs in between meals. Bake the cake flour along with other ingredients, these Devil's Food Cupcakes are simple and easy to fix.
Ingredients
1 cup sifted Swans Down Cake Flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 cup Baker's Cocoa
3/4 cup sugar
1/4 cup shortening (at room temperature)
2/3 cup buttermilk
1/2 teaspoon vanilla
1 egg plus 1 egg yolk, unbeaten
Directions
Combine flour, salt, soda, cocoa, and sugar in sifter.
Stir shortening just to soften.
Sift in dry ingredients.
Add half of the buttermilk and the vanilla; mix until all flour is dampened.
Then beat 2 minutes at a low speed of electric mixer or 300 vigorous strokes by hand.
Add remaining buttermilk, egg, and egg yolk and beat 1 minute longer in mixer or 150 strokes by hand.
Spoon batter into muffin pans, which have been lined with paper cupcake liners.
Fill only half full.
Bake in moderate oven (350°F.) 25 to 30 minutes

This is a wonderful great tasting moist chocolate cake. Texture is perfect. I had no cake flour so I put 2 tablespoons of cornstarch in a measuring cup and filled it to to top with regular white flour. No other changes were made. This made 10 cupcakes using regular size liners and filled about 1/2 inch or a little less from top. Tops came out perfect for frosting.
