Denver Omelette Recipe
This Denver Omelet is one of my favorite egg breakfasts. This microwave cooked omelet with irresistible pepper and ham inclusions is a frequent temptation. Just try this Denver Omelet and let me know if you like it !
Ingredients
2 tablespoons butter or margarine
3 tablespoons chopped green pepper
3 tablespoons chopped green onion
4 eggs
1/8 teaspoon salt
1/8 teaspoon pepper
3 tablespoons chopped pimiento
1/2 cup finely diced cooked ham
Directions
1. Put butter, green pepper and green onion into a 9-inch glass pie plate. Cook uncovered in microwave oven 3 minutes at High, or until green pepper is soft; stir after 1 minute.
2. Beat eggs slightly in a bowl and mix in salt, pepper, pimiento and ham. Pour into pie plate with vegetables; mix well. Cover with plastic wrap. Cook in microwave oven 4 to 5 minutes at Medium-High, or until almost set. As edges of omelet begin to thicken, draw cooked portions toward the center with a spoon or fork to let uncooked mixture flow to bottom; tilt pie plate as necessary, but do not stir.
3. Remove from oven and fold omelet in half. Let stand covered a few minutes before serving.
