Deluxe English Peas Recipe
Ingredients
| Fresh English peas - 2 pounds | ||
| Vegetable cooking spray | ||
| Reduced-calorie margarine - 1 tablespoon | ||
| Celery | 1 Cup (16 tbs), sliced | |
| Onion | 2 Tablespoon, finely chopped | |
| Mushrooms | 4 Ounce, sliced | |
| Diced pimiento - 1 (2-ounce) jar, drained | ||
| Salt | 1/4 Teaspoon | |
| Savory | 1/4 Teaspoon | |
| Ground pepper | 1 To taste | |
Directions
GETTING READY
1. Wash and shell the peas and then set them to boil in a covered container. Reduce heat and then simmer for 8 to 12 minutes till tender. Drain.
MAKING
2. Prepare a medium skillet by coating it with cooking spray and then add margarine to the pan along with celery and onion to saute for 3 minutes.
3. Add the mushrooms, pimiento, savory, salt and pepper and cook for 5 minutes till tender.
4. Add peas and cook till tender.
SERVING
5. Serve hot.
