Delight Of The Sea Macaroni Salad Recipe
Ingredients
2 cups (500 mL) macaroni, cooked
1 to 2 cups (250 to 500 mL) cooked or canned fish, flaked
1 green pepper, diced
1 small red pepper, slivered (optional)
1/2 cup (125 mL) celery, diced
3/4 cup (190 mL) sour cream
2 tbsp (30 mL) light cream or milk
Juice of 1/2 a lemon
1 tbsp (15 mL) fresh dill, chopped or 1 tsp (5 mL) dried dill
Directions
€¢ Microwave the elbow macaroni according to the Pasta Cooking Chart. Drain and cool.
€¢ Place cooked macaroni in a bowl. Add the flaked fish, green and red pepper and diced celery. Stir the whole with a fork.
€¢ Blend the remaining ingredients, then mix with the macaroni mixture. Toss lightly. Serve in a nest of lettuce or surround with watercress.
€¢ In summer, I sometimes use the mixture to stuff fresh tomatoes.
€¢ Do not refrigerate but keep in a cool place until ready to serve.
