Delicious Jambalaya Recipe
Ingredients
3 tbsp. butter
1/2 c. chopped onions
1/2 c. chopped green onions
3/4 c. chopped green pepper
1/2 c. chopped celery
1/4 lb. cooked ham, diced
2 cloves of garlic, minced
2 c. chicken broth
3 Ige. tomatoes, chopped
1/4 c. chopped parsley
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. thyme
1 bay leaf
1/8 tsp. cayenne pepper
1 c. rice
3 4 1/2-oz. cans shrimp
Directions
Melt butter in large heavy skillet over low heat.
Stir in onions and green onions, 1/2 cup green pepper, celery, ham and garlic; cook over medium heat for 5 minutes or until onions are tender.
Stir in broth, tomatoes, parsley, salt, pepper, thyme, bay leaf and cayenne pepper; cover.
Bring tomato mixture to a boil.
Add rice gradually, stirring constantly.
Simmer, covered, for 20 minutes or until rice is tender.
Mix in shrimp and remaining green pepper; simmer, cov- ered, for 5 minutes longer.
