Ingredients
Dr. Bob’s Baked Chicken ( or Lamb) Meatballs
Gluten-free organic ground chicken thigh - 1 lb.
Organic ground chicken breast - 1lb
Bread crumbs - ¾ cup
Gluten free brown rice
Small onion - 1(optional finely chopped and sautéed)
Organic egg - 1, mixed in the blend
Grated fresh Parmesan cheese - 1 ½ tablespoons
Organic spinach - 1/2 cup
Celtic salt and pepper
Herbs and seasonings - 1/4 tsp (use basil, thyme, poultry seasoning Frontier® brand, garlic powder, onion powder if onions are not added, oregano).
Directions
GETTING READY
1) Preheat the oven to 325 to 350°.
MAKING
2) Place the ground chicken in a large mixing bowl. Add half of the herbs with the spinach and grate the parmesan cheese on the mixture.
3) Now place the other portion of chicken on top of the first layer, and then add the rest of the herbs and bread crumbs.
4) Crack the egg on top of the mixture, and blend all the items together.
5) Mix them this way so you do not have to keep washing your hands. Check the consistency while you are blending the ingredients. If the mixture is quite moist you may want to add a few more bread crumbs.
6) Take a portion of the blended mix and form the meatballs with your hands to the size you like. Everyone has their own preference, some like the size small and others larger.
7) Place the meatballs in a glass dish cooking dish, lay them with a bit of room between each one, cover and place in the oven.
8) Check the meatballs in twenty minutes. The time for the cooking process depends on the size of the meatballs and oven temperature.

9) Serve the dish with any of your favorite dish.
