Summary
MethodBroiled
Ingredients
| Unsalted butter | 2 Tablespoon | |
| 4 (1/2-inch-thick) flounder fillets | ||
| Lemon juice | 2 Tablespoon, squeezed | |
Directions
Position rack 5 inches from heat source and preheat broiler 10 minutes.
In 13x9x2-inch baking pan, add enough water to come up one-half the thickness of the fish (1/4 inch deep for 1/2-inch fillets); add butter, lemon juice and 1 1/2 teaspoons of the Seafood Magic.
Place baking pan under broiler 5 minutes to heat the liquid.
Meanwhile, place fillets skin side down and lightly season exposed side of each with 1/2 teaspoon of the Seafood Magic.
Pull out broiler rack and lay fillets seasoned side up in pan (water should have begun to bubble on edges and butter and Seafood Magic should have dispersed).
Broil fillets until lightly browned on top and bronzed where Seafood Magic is, exactly 5 minutes for 1/2-inch fillets.
Remove each fillet with slotted spatula tilt spatula slightly to drain off excess liquid then place each fillet on heated plate
