Delhi Carrot Muffins Recipe

Ingredients
1 1/2 Cups Sugar
1 Cup Safflower Oil
4 Eggs, Lightly-Beaten
3 Cups All-Purpose Flour
2 Tsp. Baking Powder
1 Tsp. Baking Soda
1/2 Tsp. Salt
2 Cups Grated Carrots
1 Cup Pistachio Nuts
1 Cup Walnuts
Directions
Beat sugar, oil and eggs in medium bowl.
Sift dry ingredients together.
Gradually stir dry ingredients into oil, egg and sugar mixture.
Fold in carrots and nuts.
Spoon into greased muffin cups and bake until done.
(They begin to brown very quickly.) They are delicious warm.
Bake at 400 degrees 18 to 20 minutes
