Delaware Succotash Recipe
Delaware succotash is special succotash cooked along with pork. This recipe is prepared with lima beans and corn spiced with nutgmeg. Easily prepared, it can be served with mashed potatoes and meats.
Ingredients
2 thin slices salt pork
1 large ripe tomato, skinned and cubed
1 pint shelled Lima beans orthawed Lima beans
1 teaspoon salt
1 package frozen,
1/4 teaspoon pepper
Dash of nutmeg
8 ears corn or 1 package frozen, thawed corn
Directions
Lay slices of salt pork in bottom of a saucepan and cover with Lima beans.
Add enough water to cover, and cook over a low heat until the beans are tender.
Cut the kernels from fresh corn and combine with beans, cubed tomato, and seasonings.
Cover and continue cooking over a low heat for 10 to 15 minutes.
Stir frequently to prevent scorching.
