Deep-fried Scallops Recipe

Directions
Roll each in flour, dip in egg and roll in bread crumbs.
Heat fat over low heat until very hot (375°F. if using thermometer), using just enough to cover an un-crowded single layer of scallops in frying basket.
Lower basket, and fry scallops until golden brown on all sidesâ€â€3â€â€4 minutes.
Drain on paper towels, and serve with lemon wedges or Tartar Sauce.
