Deep-Fried Plantain Recipe
Ingredients
| Green plantain | ||
| Ice water | ||
| Peanut oil for deep frying, heated to 365 degree F | ||
| Salt | To Taste | |
Directions
Peel plantain; reserve the skin.
Slice the plantain on the slant in 2 1/2 inch pieces.
Soak in water.
Without draining, drop a few pieces of plantain into the oil.
Fry for 2 minutes.
Remove, using a spoon with a long handle.
Repeat until all pieces are fried.
Place a fried plantain piece inside the reserved skin.
Press between the palms of the hands to flatten the fried plantain; the edges will be jagged.
Remove from skin and deep fry again until golden brown.
Flatten and refry all pieces.
Drain on absorbent paper.
Sprinkle with salt and serve hot.
