2 lb. frozen perch fillets
 
Salt
 
1 c. pancake flour
 
1 egg
 
1/2 c. milk
 
1 lb. Shortening

Directions

"Thaw perch; wash and drain.
Season to taste.
Com- bine flour, egg and milk, blending well.
Dip fillets in batter; drain.
Heat shortening in skillet; place fillets in skillet.
Cook for 10 minutes or until golden brown.
Drain on paper towels.
