Ingredients
1/4 lb. flaked cooked haddock
1/2 cup cooked rice
1/2 cup cooked peas
2/3 cup diced cooked carrots
1/3 cup canned baked beans in tomato sauce
1/3 cup chopped raw onion
1 hard-boiled egg, coarsely chopped
salt and pepper
pinch curry powder
1/2 lb. puff pastry, homemade or frozen and thawed
oil for deep frying
Directions
1 Place the haddock, rice, peas, carrots, baked beans, onion, egg, salt, pepper and curry powder in a bowl and mix thoroughly.
2 Roll out the puff pastry thinly (1/2 inch thick). Cut the pastry into 4 rounds, each about 6 inches in diameter.
3 Place 3 large spoonfuls of the kedgeree mixture on each pastry round. Brush the edges of the pastry with water and fold over to make a half-moon shape and enclose the stuffing. Press the edges together to seal.
4 Heat the oil to 375 °F. Add the pastry cases and fry for 4 minutes or until golden.
5 Drain and serve with tomato curry sauce or lemon wedges.
