2 Ibs fish fillets
 
4 tablespoons flour seasoned with salt and pepper
 
2 eggs
 
2 tablespoons cold water
 
Sufficient cooking oil to cover a heavy based
 
Frying pan to a depth of 1 1/2 inches

Directions

Cut fillets into serving pieces, after .having washed fish and dried thoroughly.
Roll pieces of fish in seasoned flour.
Slightly beat egg and water with fork, and dip in fish pieces, thoroughly coating each fillet.
Heat oil in pan until a slight blue smoke appears.
Arrange a few pieces of fish in the pan.
Do not overcrowd the pan or overlap the pieces.
Cook until golden brown.
Drain on brown paper.
Serve with Tartare Sauce
