Deep-Fried Chicken Recipe

Ingredients
1 2-pound chicken enough water to cover chicken enough oil for deep frying
1 slice ginger
1 stalk scallion, cut into 1 inch sections
Marinade:
3 teaspoons sherry
5 teaspoons soy sauce
3 teaspoons cornstarch
Directions
Place the chicken in a saucepan and add enough water to cover.
Bring to a boil, turn down the heat and simmer for about 1 hour.
Remove chicken from the broth and bone it, cutting the meat into shreds about 2 inches long, and allow it to cool.
Coat the chicken with the marinade and allow it to stand for a few minutes.
Heat a pan and add enough oil for deep frying.
Add ginger and scallions.
When this is hot, fry the pieces of chicken for about 1 minute or until brown and crisp.
Serve immediately.
