Deep Fried Celery (Sedano Fritto) Recipe
Ingredients
1 bunch celery
2 eggs
3/4 cup (186 ml) milk
8 tablespoons flour
1 tablespoon olive oil
salt
oil for deep frying
Directions
Wash the celery and cut into 3 inch (8 cm) lengths.
Trim off coarse fibers.
Beat together the eggs and the milk.
Gradually add the flour and beat well.
Add the oil and 1 teaspoon salt.
Mix thoroughly.
Cook the celery in boiling salted water for about 7 minutes.
Drain and dry.
Dip the celery pieces in batter and fry in deep oil until golden brown.
Drain and serve immediately.
