Drain shucked oysters.
Dry with paper toweling.
Roll oysters in all-purpose flour seasoned with salt and pepper.
Dip into a mixture of 1 beaten egg and 1 tablespoon water, then roll in fine dry bread crumbs.
Fry in deep, hot fat (375°) till golden, about 2 minutes.
Drain on paper toweling.
Serve hot fried oysters with Tartar Sauce or other sauce, if desired.
