Deep Dish Spinach Pie Recipe
Ingredients
2 pounds spinach (or beet-tops), raw, washed, cut into bite-size pieces
1 cup parsley springs, stems removed
1 cup green onions, chopped
1/8 teaspoon salt
1/2 teaspoon rosemary
pinch of nutmeg, ground
2 tablespoons oil
Directions
Place all ingredients in pan.
Cook briefly, stirring once or twice, over low heat, only longs enough to reduce ingredients to half their original bulk.
Turn into oiled casserole.
Cover with rolled Cheddar Cheese Piecrust.
Brush with cream.
Bake at 425° F. for 15-20 minutes, only long enough to brown pastry.
