Deep Fried Shrimp With Lichees Recipe

Ingredients

1 pound deep fried shrimp
1/2 to 1 cup canned lichee fruit
2 slices fresh ginger root
1/3 cup vinegar
1/3 cup sugar
1/2 teaspoon salt
1/2 teaspoon heavy soy sauce
1 tablespoon oil

How to make Deep Fried Shrimp With Lichees

1. Deep-fry shrimp as in Basic Deep-fried Shrimp and keep warm. Drain lichee fruit
2. Mince ginger root, then combine with vinegar, sugar, salt and soy sauce.
3. Heat remaining oil. Stir in ginger-vinegar mixture and bring to a boil; then simmer, stirring, 2 minutes.
4. Stir in lichee fruit only to heat through. Spoon sauce over shrimp and serve at once.
