Ingredients

 Chickpea flour1 Cup (16 tbs)
 Ground roasted cumin seeds - 1/2 tsp
 Ground roasted coriander seeds - 1 tsp
 Chili powder - Pinch
 Okra1 1/4 Cup (16 tbs)
 Sunflower oil
 Salt1 To taste

Directions

GETTING READY
1 Remove the stalks from the okra.
2 Rinse and dry them.
3 Cut lengthwise into thin strips.

MAKING
4 In a bowl, mix the chickpea flour with the spices, salt, and chili powder.
5 On a very large chopping board, spread out the okra.
6 Sprinkle with the spiced flour, lift and turn them so that they are evenly coated.
7 In a deep fryer, heat plenty of sunflower oil to 350°F.
8 Add the okra in small batches and fry for 2-3 minutes or until crisp and golden brown.
9 Remove from the oil using a slotted spoon.
10 Keep on paper towels to finish draining until the remaining batches have been fried.

SERVING
11 Serve at once.
