Directions

GETTING READY
1. In a saucepan cook beef in small amount water over simmering heat until tender.
2. Take off from fire and cool.
3. Remove the bone or gristle.
4. Force the meat through medium blade food chopper.
5. Boil the stock until 3/4 cup remains.
6. Grind suet finely.

MAKING
7. In a 2 gallon kettle mix meat, suet and apples.
8. Add raisins, currants, citron and orange peel.
9. In a saucepan mix sugar, salt, spices, cider, pineapple juice, lemon rind, juice and syrup.
10. Heat to boiling point.
11. Stir in vinegar and butter and mix well.
12. Spoon the mixture into 2 gallon crock.
13. Store, covered, in cool place 3 to 4 weeks. Stir occasionally in few days.
14. Alternately pack in desired amounts and freeze.

SERVING
15. It would make a filling for 8 pies.
