Daube Glace Recipe

Daube glace is a very popular creole hors d'oeuvres or appetizer. Made with beef, it is prepared with bacon rolls stuffed in slits between the meat. Herbed with thyme and marjoram, the daube glace is marinated cooked in to serve.

 Beef round 5 pound
 Bacon Slices6

 Salt1 1/2 Teaspoon
 Sage1/4 Teaspoon
 Pepper1/4 Teaspoon
 Garlic1 Clove (5gm), crushed
 Shortening3 Tablespoon
 Thyme1/2 Teaspoon
 Onion1 Small, chopped
 Marjoram1/2 Teaspoon

Directions

Cut 6 deep slits in beef.
Combine bay leaves, sage, garlic, thyme, and marjoram and sprinkle equal amounts of the mixture over each slice of bacon.
Roll the bacon into small, tight rolls and stuff one in each of the slits.
Place the beef in a large deep bowl while you prepare the marinade.
