Date Stuffed Baked Pears Recipe

Ingredients
| 8 large, ripe, firm pears | ||
| Lemon juice | 2 Tablespoon | |
| 3/4 cup slivered almonds, toasted 175 mL | ||
| Dates | 1/2 Cup (16 tbs), chopped | |
| Firmly packed brown sugar | 1/3 Cup (16 tbs) | |
| Raisins | 2 Tablespoon | |
| Finely chopped ginger | 1 Tablespoon, preserved | |
| 1/2 cup pear nectar or apple juice 125 mL | ||
| Butter | 1/4 Cup (16 tbs) | |
Directions
Peel pears; halve lengthwise and core.
Place pears, cut side up, in 13 x 9 inch (3.5 L) pan.
Drizzle with lemon juice.
In small bowl, combine almonds, dates, half the sugar, all the raisins and ginger.
Spoon into pear halves, mounding mixture high on pears.
Combine remaining sugar and pear nectar; drizzle over and around pears.
Dot with butter.
Cover with foil.
Bake pears in 375°F (190°C) oven for 45 minutes or until tender and juicy.
Spoon sauce over pears once or twice during baking.
Serve warm.
Makes 8 servings as is, 16 when served with ice cream.
Toast almonds on baking sheet in 350°F (180°C) oven for 5 minutes or until golden.
