Date Mousse Recipe
Ingredients
1 1/2 cups heavy cream
1 1/2 cups sweet cider
4 tablespoons honey
4 egg yolks
1 1/2 cups dates, pitted
1/4 teaspoon salt
Directions
Whip cream and honey in blender until stiff.
Turn into bowl.
Blend rest of ingredients until smooth, then cook gently in top of double boiler, over hot water, stirring frequently, until mixture is just thick enough to coat spoon.
Remove from heat.
When cool, fold in cream and honey mixture.
Freeze in ice tray of refrigerator.
