Date Cakes Recipe

Ingredients
2 cups pitted dates
1 cup water
1 tablespoon lard
1 cup glutinous rice flour
1/2 cup blanched walnuts, chopped fine
1/3 cup sugar
1 tablespoon sesame seeds drop of oil
Directions
Wash the dates, bring to a boil in 1 cup of water and simmer for about 20 minutes or till the water is all evaporated.
Skin the dates and pass through a sieve.
Add the lard and the glutinous flour and knead well.
Roll out into a long roll about 1 inch in diameter and cut into 1/2 inch pieces.
Flatten these pieces out thin.
Saute the sesame seeds in a little oil for about 2 seconds, add the walnuts and sugar and toss for another 2 seconds.
Put a tea spoon of this mixture on each piece of dough and shape into a ball.
Roll balls lightly in flour and place on a square of waxed paper, seam side down.
Steam for 15 minutes and serve very hot.
Will make about 20 small cookies.
