Date Cake Recipe
This date cake is almost as good and healthy as the dates itself. Wrap the goodness of dates in this delicious cake and serve as dessert to any occasion!
Ingredients
6 oz. OURMIX
2 oz. butter
1 tblspn, syrup
1 tblspn, sugar
3/4-lb. chopped dates
1/4-tspn.mixed spice,
pinch salt,
1/4-tspn. Bi-carb,
3 tblspns,buttermilk,
1/2 -cup dessicatedcoconut.
Directions
Pour 4 tblspns, water (or black coffee) over dates.
Add syrup, butter and sugar.
Boil till soft, stirring constantly.
Cool.
Stir in the Bi-carb., salt and spice.
Mix sifted flour and coconut and mix into date mixture with the buttermilk.
Bake at 350°F for about 40 mins.
Cool and ice with: 3 tblspns, milk 3 tblspns, sugar 1 tspn, golden syrup pinch salt icing sugar Boil everything (except icing sugar) together until thick.
Remove from stove and add suffi- cient icing sugar to make a spreading paste Spread over warm cake.
Add syrup, butter and sugar.
