Date-Apricot Filling Recipe
At home, my mom always has certain pre-cooked mixe stored and handy for anytime use. One such that I absolutely love is the Date-Apricot Filling. It is so easy and quick, and goes great in several different ways. Over ice cream, topped off on crackers, or even as a breakfast item on toast, this is a fabulous recipe!
Ingredients
Dates - 1 cup, cut and pitted
Sugar - 1/2 cup
Juice drained from apricots - 2 tablespoons
Cooked dried apricots - 2 cups, mashed and drained
Directions
MAKING
1) In a saucepan, combine all the ingredients.
2) Gently cook, while stirring constantly.
3) Allow mix to thicken, and continue cooking for about 5 minutes.
4) Refrigerate.
SERVING
5) Serve over ice cream!
