Date And Nut Fruit Cake Recipe

1 lb (2 cups) fruitcake mix
 
1/2 lb (1 cup) candied cherries
 
1 lb whole pitted dates
 
3 cups whole Brazil nuts
 
1 cup sifted flour
 
1 cup sugar
 
1 teaspoon baking powder
 
1/2 teaspoon salt
 
4 eggs
 
1/4 cup rum

Directions

Combine fruit and nuts, leaving cherries, dates and nuts whole.
Sift dry ingredients over the fruit and mix well.
Add eggs and beat well.
Foldinrum.Line2 large loaf tins (or 4 small ones) with wax paper.
Spoon in cake and bake approximately 2 hours for large size, at 300°.
Test with toothpick.
Cool for 10 minutes before removing from pans.
