Date Pinwheels Recipe
Ingredients
Garnish
1 1/3 cups (330 ml) dates, cut into small pieces
2/3 cup (160 ml) sugar
2/3 cup (160 ml) water
1 tsp (5 ml) vanilla extract
Pastry dough
1 1/2 cups (375 ml) brownsugar
2/3 cup (160 ml) shortening
2 eggs, lightly beaten
2 1/2 cups (625 ml) all purpose flour
1/4 tsp (1 ml) baking soda
Directions
– Preheat oven to 350 °F (175 °C).
– Cook dates with sugar and water.
– Add vanilla extract, stir and cool.
– Meanwhile, sift the dry pastry ingredients.
– Cut the shortening into small pieces and blend into the dry ingredients. Knead the dough gently, then stir in the eggs. Let the dough stand for 30 minutes.
– Roll out dough to 1/2-inch (1.25 cm) thickness.
– Bake on buttered cookie sheet for about 10 minutes.
