Date Crumble Cake Recipe

Ingredients
2 cups (350 g) fresh dates, pitted
8 tablespoons (100 g) soft margarine
1/2 cup (100 g) sugar
1/4 teaspoon vanilla extract
Generous 1 cup (175 g) whole-wheat flour
1/4 teaspoon salt
Generous 1 cup (100 g) rolled oats
Directions
Grease a 9-inch (23-cm) springform cake pan.
Preheat oven to 350°F (175°C).
Finely chop dates.
Cream margarine, sugar and vanilla in a medium bowl until pale and fluffy.
Gradually add flour, salt and oats; mix with fingertips until crumbly.
Spread half the oat mixture over bottom of greased cake pan.
Press mixture down into pan, raising sides slightly.
Spread dates over oat mixture; crumble remaining mixture over top.
Bake 45 to 50 minutes or until lightly browned.
Let cool slightly in pan then remove from pan and serve warm.
