Date Coffee Cake Recipe
Ingredients
2 cups unsifted all-purpose flour
1/4 cup plus 2 tablespoons firmly packed light brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 cup coarsely chopped pitted dates
3/4 cup plain nonfat yogurt
3 tablespoons vegetable or corn oil
1 large egg
1 tablespoon grated orange rind
1/4 cup toasted wheat germ
Directions
1 Preheat the ovento375° F.
Lightly grease and flour a 9"x 9"x 2" baking pan.
In a large bowl, combine the flour,1/4 cup of the sugar, the baking powder, baking soda, salt, and ginger; stir in the dates.
2 In a small bowl, stir together the yogurt, oil, egg, and orange rind.
Make a well in the center of the flour mixture, pour in the yogurt mixture, and stir just until combined.
Donotovermix.
Spoon the batter into the prepared pan, smoothing it to the edges.
3 Combine the wheat germ and remaining 2 tablespoons of sugar and sprinkle over the top.
Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
