4 dried forest mushrooms,softened and cut into 21 small slivers
 
1 teaspoon soy sauce
 
1/2 teaspoon sake or dry sherry
 
1/4 teaspoon sugar
 
Salt and soy sauce to taste
 
1 recipe Chicken Balls
 
7 tiny lemon peel strips
 
7 small watercress sprigs

Directions

Simmer mushroom slivers in mushroom soaking water, soy, sake and sugar 10 minutes.
Bring dashi to boil and adjust seasonings to taste with salt and soy.
In each of 7 bowls place 3 mushroom slivers, 3 Chicken Balls and 3 pieces of age.
Ladle hot dashi over and garnish with lemon peel and watercress sprigs
