Danish Style Mushroom Remoulade Recipe
a gourmet version of Danish remoulade sauce for hotdogs

Ingredients
| Chopped mushrooms | 1⁄2 Cup (8 tbs) | |
| Diced shallot | 1 | |
| Diced carrot | 1⁄4 Cup (4 tbs) | |
| Diced sweet pickles/5-6 diced pickle slices | 2 | |
| Chopped capers | 1 Teaspoon | |
| Chopped tarragon | 1 Teaspoon | |
| Dijon mustard | 1 Teaspoon | |
| Wine vinegar | 1 Tablespoon | |
| Mayonnaise | 1⁄2 Cup (8 tbs) |
Directions
1. Saute mushrooms, shallots, carrots in a little butter browning them slightly.
2. add the vinegar and reduce all the liquid
3. add the Dijon, capers and pickles
4. let cool and mix with the mayonnaise
