Danish Prune Crepes Recipe

Ingredients
| Dried prunes | 3/4 Cup (16 tbs) | |
| Sugar | 3 Tablespoon | |
| 1/4 teaspoon ground cardamom 1/2 teaspoon vanilla | ||
| Salt | 1/8 Teaspoon | |
| 4 warm dessert crepes | ||
| Confectioner’s sugar | 2 Tablespoon | |
Directions
Add enough water to cover prunes.
Bring to a boil; then reduce heat and simmer, covered, for 30 minutes.
Drain prunes, reserving 3 tablespoons liquid.
Cool, pit and chop.
Combine prunes, prune liquid, sugar, and cardamom.
Cook, stirring continuously, for 5 minutes or until mixture is thick.
Add vanilla and salt.
Divide between warm crepes and roll.
Sprinkle with sugar and serve.
