 Dried prunes3/4 Cup (16 tbs)
 Sugar3 Tablespoon
 1/4 teaspoon ground cardamom 1/2 teaspoon vanilla
 Salt1/8 Teaspoon
 4 warm dessert crepes
 Confectioner’s sugar2 Tablespoon

Directions

Add enough water to cover prunes.
Bring to a boil; then reduce heat and simmer, covered, for 30 minutes.
Drain prunes, reserving 3 tablespoons liquid.
Cool, pit and chop.
Combine prunes, prune liquid, sugar, and cardamom.
Cook, stirring continuously, for 5 minutes or until mixture is thick.
Add vanilla and salt.
Divide between warm crepes and roll.
Sprinkle with sugar and serve.
