Omelette With Herring Recipe

Ingredients
7-ounce can herring fillets or 1 jar herring in sour cream
Radishes, washed and sliced thin
6 to 8 eggs
3 tablespoons light cream
1 teaspoon salt
1/2 teaspoon lemon pepper
4 tablespoons butter or margarine
Parsley for garnish
Directions
Cut herring into strips.
If you prefer the herring in sour cream, cut it into 1-inch pieces.
Slice radishes and set aside.
These must be ready first.
Beat eggs in a bowl with cream and seasonings.
Heat butter in a large skillet.
Pour in eggs and allow to set lightly on the bottom.
Tilt pan and let liquid run to sides.
When eggs are set firm, slide omelet onto a heated platter.
Top the omelet with herring pieces, radishes, and parsley.
Serve with your favorite hard rolls.
