Danish Meat Patties Recipe
Ingredients
1 pound lean ground beef
1 medium onion, coarsely chopped
2 tablespoons all-purpose flour
1/4 cup club soda
1 egg, beaten
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 tablespoons vegetable oil
2 pounds small new potatoes
2 tablespoons melted butter
3 tablespoons chopped chives
Directions
Combine ground been and onion in large bowl blend well.
Stir in flour, soda, egg, and seasonings.
Chill 1 hour.
Shape into six 4 x 2 x 1 inch thick oval pat ties; dredge with additional flour.
Heat oil in a large skillet.
Add patties.
Cook over moderate heat until browned and cooked through; turn once.
Drain well on paper toweling; keep warm.
At the same time cook well-washed potatoes in boiling, salted water until tender, 15 to 20 minutes.
Drain potatoes; remove skins or not, as you prefer.
Arrange patties and potatoes on heated serving platter.
Pour melted butter over potatoes; sprinkle with chives.
