Ingredients
2 pounds lean ground beef
1 pound lean ground pork
2 eggs
Salt and pepper to taste
6 slices bacon, chopped
1/2 to 1 cup bread crumbs
2 to 3 cups hot milk
3 tablespoons margarine
3 to 4 tablespoons flour
1/4 cup apple jelly
Directions
Combine the ground beef, ground pork, eggs, salt, pepper and 2/3 of the chopped bacon in a large bowl; mix well.
Shape into 1 large or 2 smaller oval loaves.
Roll in the bread crumbs and place in a greased 9x13 baking pan.
Bake at 375 degrees for 45 minutes.
Drain the fat.
Pour in the hot milk.
Arrange the remaining chopped bacon over the top and bake for 45 minutes longer.
Melt the margarine in a saucepan over medium heat.
Whisk in the flour.
Whisk in about 1 1/2 cups of hot milk mixture from the meat loaf pan.
Cook until thickened, stirring constantly.
Stir in the apple jelly.
