Danish Style New Potatoes Recipe
Danish style new potatoes is a dilled potato recipe. European inspired, the Danish style new potatoes are sweetened with a little brown sugar to taste. Skillet cooked and served with dill sprinkled on top, it is a lovely side for meals.
Ingredients
16 small new potatoes, impeded
1/4 cup water
2 teaspoons light brown sugar
1/2 tablespoon unsalted margarine
1 tablespoon snipped fresh dill
Directions
In a medium size heavy saucepan, bring 3 cups unsalted water to a boil.
Add the potatoes and simmer, partially covered, for 15 minutes or until the potatoes are tender.
Drain, cool for 10 minutes, peel off the skins, and set aside.
Put the 1/4 cup water and the brown sugar into a 10 inch nonstick skillet over moderate heat; bring to a simmer and cook, stirring, until the sugar has dissolved about 2 minutes.
Add the margarine and continue to cook, stirring, until it has melted about 1 minute.
Add the potatoes and toss until heated through about 2 minutes longer.
Sprinkle with the dill.
